Hippie Oatmeal and Pumpkin cookies (no, not weed ones!)

I have always loved Oatmeal cookies, they're actually one of my favorite types of cookies.. Something about chewy oats, sweet raisins and cinnamon. Delicious! These cookies are super simple, easy and HEALTHY! Yes, healthy! Enjoy it as a quick little snack or breakfast. 
Ingredients: 
Oatmeal Cookies~
(makes 10 fairly good sized cookies imo)
2 Tb peanut butter 
80 grams oats / 1 cup 
3 small ripe bananas or 2 large ones  (whatever tickles your fancy)
cinnamon (to taste) 
handful of raisins 
additional nuts, chocolate, etc are optional. You are the boss of your cookie! :) 

Pumpkin spiced Cookies~ 
Ingredients: 
(makes 12 cookies) 
80 grams oatmeal/ 1 cup 
1/2 cup pumpkin puree (canned or roast your own and blend) 
60 grams honey/maple syrup / 2 tablespoon
90 grams sunflower seeds / 2 tablespoon 
cinnamon 
dark chocolate 
pinch of salt 

Instructions for both types of cookies. ONE STEP! :) 

Mash everything up in a bowl and bake for 315 degrees for 20 mins on a lined baking non-stick tray. Enjoy!!

the healthy way: Pumpkin Pie

I love pumpkin, sweet potatoes, carrots, any root vegetable really. My personal favorite is the Japanese squash: Kabocha. If you ever see a green flesh squash at the super market, I encourage you to buy it and try it out! Naturally chalked full of sweetness and vitamins. Anyways, enough about that! Let's learn how to make a super clean and healthy Pumpkin Pie. I played around with a lot of different recipes online, but one day I just decided to off on a tangent and just - well dare I say- ''YOLO'' it. And you know what? It came out just how I wanted it to! I'm not the biggest fan of uber ''sugar sweet'' so please feel free to add as much or as little sweeteners as you like. You are the boss of you pie! ;) The texture is firm, but still creamy. 
Ingredients: 
Please keep in mind you are free to substitute a lot of these ingredients! 
Pumpkin Pie:  

Crust:

50 g pecans = 300 cal   (or walnuts, any type of nuts really!) 
60 g dates = 200 cal     
10 g oats= 35 cal    (rolled oats works best)
15 g honey = 40 cals  (or agave nectar) 
1 tsp cinnamon  (or any seasonal spices!) 
1 tb sunflower seeds = 45 cals  (or anys of seeds)
= about 620 cals crust 

Pie filling 

1 egg+1 white= 100 cals
1/2 can pumpkin = 45 cal
20 g oats = 75 cals
120 g honey = 120 cals
1 tb brown sugar = 45 cals
1/4 cup almond milk= 8 cals
Pinch salt
1 tsp cinnamon

About = 400

Total calories for pie= 1020
Servings = 10 

About 100 per a slice!   


 
Step 1: Gather up all your ingredients! Preheat your oven to 325 degrees. 

Step 2: To make the crust, blend everything except your sunflower seeds, until a nice paste is formed. At this point, taste it. If you want it a bit sweeter, add honey, dates or simply sugar! 

Step 3: Stir in the sunflower seeds to your ''crust'' mixture. It should be able to hold it's shape. 



Step 4: Transfer your crust into a lined or oiled pan victim. Pat it down firmly with your hands or with a cup if you're feeling classy.  

Step 5: To make the filling, just add everything (EXCEPT THE EGGS) and mix! Taste and adjust the sweetness and spice level to your liking, THEN add in the eggs. Blend until the oats are basically homogenous with super smooth batter. 

Step 6: Pour the filling into your prepared crust and bake at 325 for about 35-40 mins (or until the top is firm) Let it cool for an hour on the counter and transfer into the fridge to cool for 3 additional hours. If you're feeling fancy, throw on a few decorates like pecans or micro size seeds (sesame seeds..) 


                                                  
All that's left is to eat! This is 1/10th of the pie, which averages to about 100 calories. You are eating only natural ingredients that are super clean! :) Dieting shouldn't be about restriction, but rather eating clean! Share with family and friends. My mom and dad loves it! Enjoy!
